The Nou Moderno is run by the third generation of the Vallespí family, who decided to open the first bar in their village 60 years ago. The grandchildren of the founders, siblings Josep Maria and Maria Rosa, opened the new Nou Moderno a few years ago on the other side of the street to expand their culinary offerings and lodgings. Maria runs the kitchen using recipes she learnt from her mother and perfected at the Cambrils School of Hospitality as well as the prestigious Hoffman School in Barcelona. Jose, on the other hand, sources all the raw ingredients. The menu includes fun updated versions of traditional dishes such as Grandma Rosa’s fricassee, a sauce soaked tortilla, and the stuffed bread roll known as “clotxa”. Their locally sourced produce is always environment friendly and can be accompanied by regional wines.
